ROSEMARY & LEMON GIN FIZZ

A refreshing herbal twist on a classic gin and tonic, it's the perfect drink for virtual cocktail parties with friends or relaxing in the garden.

INGREDIENTS
Serves 2

50ml gin 1 tbsp of fresh lemon juice
1 lemon slice
3 rosemary springs
120ml water
100g sugar
75ml soda water

YOU WILL NEED

Small saucepan
Cocktail shaker
Tall glasses

METHOD

1. Make a simple rosemary syrup. Combine the water and sugar in a small saucepan and bring to the boil. Stir until the sugar dissolves. Remove the pan from the heat, add two sprigs of rosemary and let it steep for one hour until cool.

2. Add the gin, lemon juice and one tablespoon of the rosemary syrup to a cocktail shaker filled with ice. Strain into a glass filled with ice and top up with the soda water. Garnish with the lemon slice and remaining rosemary sprig.
